Master Roaster and Owner of Campbell’s Coffee in Covington, Elizabeth Van Sant is a Katrina transplant from New Orleans to St. Tammany. Since making Covington her home in 2006, Elizabeth has worked with Mayor Cooper on Quality of Life planning, St Peter School Boy Scouts teaching citizenship, and as a volunteer with the Boys and Girls Club, Northshore Foodbank, and Habitat for Humanity where she also served on the Women’s Build Committee. Campbell’s Coffee has partnered with Mayors Cooper and Johnson for Coffee with the Mayor, and is an active member of the Covington Business Association. In 2015, Elizabeth graduated from the St. Tammany Leadership program.
It is through her efforts with the Rotary Club of Covington, however, that Elizabeth has had the biggest impact on our community. She served as president twice and since 2007 has developed and strengthened partnerships with Keep Covington Beautiful, Miracle League Northshore, NAMI St Tammany, and Safe Haven, among others, as well as promoting a larger role for Rotary in youth activities including new scholarships for Covington High graduates, scholarships for Rotary Youth Leadership, and bringing Rotary Youth Exchange to Covington and Slidell. In 2020-2021, Elizabeth is also serving as District Governor of Rotary District 6840, which encompasses all of Southeast Louisiana and South Mississippi. Running a business during COVID-19 has been challenging, but nothing compares to leading a volunteer organization of 2000 professionals in 50 clubs across two states. Katrina provided training for adaptation and resilience, critical skills that define Elizabeth’s leadership style.
